Does Baking Powder contain Alcohol?

WHAT IS BAKING POWDER?

Baking powder is dry chemical leavening agent (a substance which reacts to produce gas, so bubbles get trapped in dough etc. giving a soft spongy texture) used in baking breads, cakes, biscuits etc.


WHAT DOES IT CONTAIN & HOW IS IT MADE?

There are several formulations with the most containing an Alkali and 1 or 2 Acids in the form of salt crystals with Starch to keep it dry.

Sodium Bicarbonate (Baking Soda) is blended with Corn starch and tartaric Acid.

Tartaric Acid is made from Potassium hydrogen tartrate a waste product of wine making. This is purified and converted to calcium tartrate, using sulphuric acid this is hydrolysed to form calcium sulphate and tartaric acid.

There is no ethyl alcohol left in the end product (dietandfitnesstoday.com).

The above 3 components are combined in appropriate amounts into mixing containers having stainless steel blades then go through vacuum tubing, filling machine and packed into cans, packets fibre cartons for industrial use.


WHAT SOURCES ARE THE COMPONENTS FROM?

Sodium Bicarbonate is a component of a mineral Natron and is found dissolved in many mineral springs. It is also produced artificially.

Cream of Tartar, This is a by-product of wine making and it is the Potassium acid salt of tartaric acid. This crystallises in the wine casks during the fermentation of grape juice. This crude form known as Bee-swing is collected and purified to produce the white odourless acidic powder which is extensively used for culinary and household purpose.

Most of the other Acids are derived from naturally occurring minerals.


HOW DOES IT DIFFER FROM BAKING SODA?

Baking soda is just Sodium Bicarbonate alone but Baking powder is a combination of Sodium Bicarbonate which is an alkaline salt 1 or 2 acid salts like cream of Tartar, calcium phosphate and citrate, sodium pyrophosphate, sodium and calcium aluminium phosphate corn starch to keep it dry.
